Top 5 Ways to Use Keeley Krackerz This Summer!

With summer and the heat upon us at last, no one wants to spend a lot of time in the kitchen!  Here are five quick, simple and refreshing recipes using Keeley Krackerz that will make you the hit of the neighborhood picnic or family barbecue!

1.  Cool Cucumber Cracker Appetizer

Recipe:

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • 32 Keeley Krackerz® Original crackers
  • 1/2 cup Ranch Veggie Dip
  • 1 English cucumber, sliced very thin
  • Finely chopped radishes (optional)

Directions

1. Spread each cracker with Ranch Veggie Dip and top with cucumber discs. Sprinkle with chopped radishes, if desired. Serve immediately.

2.  Mediterranean Tuna Salad

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano leaves
  • 1 clove garlic, minced
  • Dash salt
  • 1 can (6 1/2 oz.) chunk white tuna, drained
  • 1/2 cup finely chopped carrot
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • Keeley Krackerz® Original crackers

Directions

1. In small bowl whisk together oil, vinegar, oregano, garlic and salt. Add tuna, carrot, onion and parsley. Toss to coat. Serve with crackers.

3.  Avocado and Mango Salsa

Ingredients

  • 1 1/2 cups finely chopped mango or fresh pineapple
  • 1 large avocado, halved, seeded, peeled, and finely chopped
  • 1 small onion, finely chopped
  • 2 tabelspoons chopped fresh cilantro
  • 1 tablespoon lemon juice or lime juice
  • 1 tablespoon finely chopped jalapeno pepper (optional)
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 40 Keeley Krackerz® Original crackers

Directions

1. In small bowl toss together mango, avocado, onion, cilantro, lemon juice, jalapeño pepper (if desired), salt and pepper.

2. Spoon mango mixture on top of Keeley Krackerz® Original crackers. Serve immediately.

4.  Greek Garden Spread

Ingredients

  • 1 package (8 oz.) reduced-fat cream cheese, softened
  • 1/2 cup sliced green onions
  • 3 tablespoons low-fat plain Greek yogurt or low-fat plain yogurt
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 3/4 cups garlic hummus
  • 1 cup finely chopped cucumber
  • 1 cup seeded and finely chopped tomato
  • 3/4 cup (3 oz.) crumbled feta cheese
  • 1/4 cup cup chopped, pitted kalamata olives
  • Keeley Krackerz® Original crackers

Directions

1. In small mixing bowl beat cream cheese, green onions, yogurt, Italian seasoning, pepper and garlic powder on medium speed of electric mixer until combined. Spread on 9-inch serving plate or in 9-inch pie plate.

2. Spoon hummus over cream cheese mixture.

3. Sprinkle cucumber, tomato, feta cheese and olives on top. Serve with Keeley ® Original crackers.

5.  California Party Spread

Prep Time: 10 minutes

Total Time: 45 minutes

Ingredients

  • 1 can (14 oz.) artichoke hearts, well drained and chopped
  • 1 package (8 oz.) cream cheese, softened*
  • 1 cup light mayonnaise
  • 1 cup grated Parmesan cheese
  • 3/4 cup chopped tomato
  • 1 medium jalapeno papper, seeded and minced
  • 1 teaspoon dried dill weed
  • Keeley Krackerz® Original crackers

Directions

1. In a medium-size mixing bowl combine all ingredients except Keeley Krackerz® Original crackers. Place in a shallow baking dish

2. Bake at 325°F for 35 to 40 minutes or until heated through and lightly browned.

3. Serve with crackers.
